This recipe is called “best-ever” and I always wonder about that claim. Who decides? What are their names?
What’s the criteria for declaring this garlic bread the best-ever? Was there a poll? A taste test?
Many unanswered questions.
I’m asking these questions because I think I may have improved on the recipe a bit and I don’t know who to check in with and what description is better than best. Most awesome? Ultimate? Maybe greatest… at least until someone improves on this.
How come I think this recipe is better? I mashed the garlic into a paste in my mortar and pestle. I think that this allowed the garlic to mix more completely with the butter and certainly made the garlic butter easier to spread.
Tip: Keep watching this space for another garlic bread recipe. One that doesn’t make any claims, but is tasty nonetheless.

Get some garlic and peel and prepare 4 cloves (5 if one is small).
Chop the garlic to make the next step easier.
Place the garlic and the salt in the mortar and pestle.
Bash until there is garlic paste.
Mix the paste with softened butter.
Get your bread. This time ciabatta was used. Slice it in half lengthwise and put it on a sheet pan.
Slather the bread with the garlic bread. Another tip: Save any extra garlic butter to use for garlic bread another day or on different food: on a steak or in pasta would be good.
Broil at 425° for about 10 minutes. Watch it so it doesn’t burn. I skipped the Parmesan because I didn’t feel it was needed and the parsley because I didn’t have any.
Slice it into serving-sized pieces.

Best-Ever Garlic Bread
Yields: 6 servings

Ingredients
4 cloves garlic, mashed into a paste with a mortar and pestle with 1/2 tsp. kosher salt
1/2 c. (1 stick) butter, softened
1 baguette or French bread, cut lengthwise
2 tbsp. freshly chopped parsley
1/4 c. grated Parmesan
Directions
Preheat oven to 425° and line a large baking sheet with foil. Make garlic compound butter: In a small bowl, mix softened butter with mashed garlic and salt until well combined.
Spread cut sides of bread liberally with garlic butter.
Bake until bread is toasty and golden at the edges, about 10 minutes.
