Brie Bites Three Ways

Just in case you are having guests over to yours during the holiday season, here is a suite of recipes using Tostitos® Scoops!® (Really? A trademarked exclamation mark? Huh.). I am not being paid for this endorsement AT ALL, but I do think the chips are pretty good, even if they are too salty.

I was using the Scoops (not using the symbols again until the recipe) in the usual way one night, moving large amounts of salsa from a bowl into my mouth while watching some television. I noticed a recipe on the package for a far more upscale snack: Brie with apricot jam and walnuts. I was going to try that combination next time for sure.

Then I got thinking of other ingredients that would be good together… like maybe cranberry sauce and Brie cheese. The quality of this idea was proven when I bought the next bag of Scoops to try out the Brie-apricot jam-walnut mixture and saw a recipe for it on the back.

But then I had another idea which I didn’t see on the Tostitos’ website or on the back of any bag: old Cheddar cheese with Major Grey chutney and almonds (™®©). Being that I had no almonds around when I made this appetizer, I can tell you that walnuts worked and this turned out to be my favourite of the combos I tried.

I also heated the Scoops for 5 minutes at 350°F when they were loaded. The melted cheese and sticky jam helped to keep the nuts from falling off when taking a bite.

Here’s what happened.

Placed a bunch of Scoops on a baking sheet.

Scoops ready to be filled.

Got the Brie…

Brie cheese.

…and placed pieces of it in 2/3 of the Scoops.

Add some Brie.

Covered one row of the Brie-filled Scoops with apricot jam.

Add some apricot jam.

Covered another row with the cranberry sauce.

Add some cranberry sauce.

Cut some old cheddar cheese into Scoop-sized pieces.

Cut old cheddar cheese into small cubes.

Placed the cheddar cheese in the remaining row of Scoops, then put some chutney on top.

Dollop Major Grey chutney on top.

Placed a walnut piece on the top of each Scoop.

Ready for the oven.

Baked them for 5 minutes, then served Brie Bites Three (really only two) Ways.

Brie Bites Three Ways

1 pack Brie cheese (cut into small cubes)
1 small rectangle Old Cheddar cheese
1 jar apricot jam
1 jar Major Grey chutney
1 handful crushed walnuts
1 handful roasted almonds
1 can cranberry jelly
1 bag Tostitos® Scoops!® Tortilla Chips

Apricot Walnut Brie Bites:
Evenly place slices of brie into each Tostitos® Scoops!® tortilla chip.
Dollop apricot jam to partially cover brie.
Sprinkle lightly crushed walnuts to finish.

Cranberry Brie Bites:
Evenly place slices of brie into each Tostitos® Scoops!® tortilla chip.
Dollop cranberry jelly over brie to partially cover.

Chutney and Old Cheddar Bites:
Place cubes of old Cheddar cheese into each Tostitos® Scoops!® tortilla chip.
Dollop Major Grey chutney over brie to partially cover.
Top each with an almond.

Prosciutto Melon Brie Bites:
Evenly place slices of brie into each Tostitos® Scoops!® tortilla chip.
Slice prosciutto piece in half, roll and place on top of brie.
Dollop finely diced melon on top of prosciutto.
