It’s nice to find a recipe with a few ingredients–ones that you’ve used many times before—that creates a great new flavour. And if it doesn’t involve much more work, it’s even better.
That’s what happens here. When the butter is browned, it produces a nutty smell and flavour and is fantastic with these green beans. Adding the garlic and pine nuts doesn’t hurt either.
Get the butter and start it melting in a frying pan. I used a light coloured pan so it would be easier to see the progress and therefore be less likely to end up as burnt butter.
While the butter is browning, get the garlic.
Slice two cloves of garlic very thinly.
Get the pine nuts.
And brown them too.
The butter is browned.
Add the sliced garlic and toasted pine nuts plus salt and pepper to the butter. This smells very good.
While the butter was browning and the pine nuts were toasting and the garlic was being sliced, the green beans were being steamed.
Pour the butter-pine nut-garlic mixture over the green beans.

Green Beans With Brown Butter

1 1/2 pounds green beans, trimmed
4 tablespoons unsalted butter
2 large cloves garlic, thinly sliced
1/3 cup (about 2 ounces) pine nuts
Kosher salt and pepper
Bring a large pot of salted water to a boil. Add the green beans and cook until just tender, 3 to 5 minutes.
Meanwhile, melt the butter in a skillet or small saucepan over medium heat. Stir with a wooden spoon as it starts to foam. Remove the butter from heat as soon as it begins to turn golden brown and smell nutty, about 1 minute.
Add the garlic, pine nuts, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Swirl the skillet over heat for 30 seconds more to coat the nuts. Spoon the mixture over the green beans and serve.
