Roasted Pumpkin Seeds

All right! Saved the pumpkin seeds from making Pumpkin Stuffed with Everything Good which means I have a tasty treat ahead. Even though it’s not baseball season (I wish it was always baseball season), pumpkin seeds are a great snack to have around. And very easy to make.

Get the seeds from your pumpkin.

Clean the pumpkin guts off by rinsing the seeds under water in a sieve.

Get some salt. This is smoked Maldon salt.

Add the salt to water. The ratio? About 1 tablespoon of salt to 2 cups of water.

Bring to a boil.

Reduce the heat to simmer and cook for 10 minutes, then drain.

Put the drained pumpkin seeds on a baking seed, drizzle some olive oil over and roast them.

After 15 minutes in a 400°F oven. I stirred them after 10 minutes in the oven.

Now I will pop my copy of my favourite baseball movie (Eight Men Out) into the DVD player and eat my pumpkin seeds and pretend it is a warm summer afternoon.
