Wondering what else you can do with your freshly made granola other than putting it on top of yogurt? Here’s another suggestion: grill some peaches and top them with that granola.
Grilling fruit is a popular thing to do in the summer, when people are barbequing all the time. There’s always a bit of space available to sneak a peach or apricot on the grill. The heating reduces the liquid in the fruit and caramelizes the sugar that the fruit contains which changes the taste in a way that is very tasty.
The lack of a BBQ (and the passing of summer… sigh) should not affect the production of this delicious dessert. If you have a Griddler, you’re good to go. I have one, but was too lazy to get it out of the cupboard so I can tell you that this will work if you use a frying pan. No grill marks, but this is a sacrifice I can live with.
Here’s how it went.
Got some peaches. These were perfectly ripe and smelled fantastic.
Halved a peach and pried out the pit.
Sprayed the fry pan with some cooking oil and put the peach flesh side down.
Cooked the peach for 5 minutes. Removed the peach when it was warmed through and before it started to get too soft.
Drizzled the peach with honey.
Then added some of the D.I.Y. granola.

Ingredients
2 peaches or nectarines, halved and pitted
4 tablespoons honey
1/2 cup granola
Directions
Spray halved nectarines with neutral-flavored cooking spray. Place flesh side down on a grill pan. Grill about 5 minutes until softened. Place on a plate and drizzle each half with honey, then sprinkle granola over top.
