There are lots of food that you can buy all ready made. They are time savers and it is easier to grab something off the store shelf rather than do the shopping for all the ingredients and make the stuff yourself.
But there is a sense of satisfaction that comes from making something yourself. And making your own granola is so easy!
D.I.Y. granola? D.I. Y not?™
Here we go.
Get the rolled oats.
Add the coconut (where does one get coconut chips?)
Add the almonds.
And the brown sugar too.
Maple syrup is added to the canola oil.
The salt is added.
Stirred to combine and to dissolve the salt.
Pour the oil/syrup/salt mixture into the dry ingredients.
Mix so that the liquid is well distributed.
Spread the mixture out on two baking sheets and bake for an 1 hour and 15 minutes.
Meanwhile, get the dried cherries.
And the chocolate chips.
Add the cherries and the chocolate to the baked granola.
Chocolate Cherry Granola.
I like adding granola to yogurt.
Here’s the recipe I used:
Chocolate Cherry Granola
Yield: about 7 cups of granola
4 cups rolled oats
1 cup coconut chips (or flaked coconut)
1 cup almonds, roughly chopped
1/4 cup brown sugar, lightly packed
6 tablespoons maple syrup
6 tablespoons canola oil
1/2 teaspoon kosher salt
1/2 cup mini chocolate chips
1/2 cup dried cherries, roughly chopped
Preheat the oven to 250° F. Combine the oats, coconut, almonds and brown sugar in a large bowl.
In another bowl or measuring cup, combine the canola oil, maple syrup, and salt. Pour the liquid into the oat mixture while stirring to combine. Mix until the liquid is evenly distributed.
Divide the mixture between two 11×17 inch baking sheets, spreading it out so that it’s even. Bake for 1 hour and 15 minutes, until it starts to brown. I usually swap the baking sheets halfway through the baking time.
Remove from the oven and allow to cool completely. Transfer to a large airtight container and stir in the chocolate chips and dried cherries. It will keep in an airtight container for at least 2-3 weeks, probably longer, but mine is always all gone by that point so I can’t be sure!
