Love, love, love recipes that are only a little work with a big payoff. This is one of them. A quick, easy and very tasty appetizer. If you are coming for dinner in the next while, you’re likely getting this as a starter.
It’s a winning combination of sweet and salty with great texture… caramelized outside, creamy inside and some crunchiness from the salt.
Get some Medjool dates.
Saute them in a fry pan with olive oil.
Sprinkle with sea salt (I used fleur de sel).

Sauteed Medjool Dates with Olive Oil and Sea Salt
1/4 cup good olive oil
2 cups Medjool dates, unpitted
1 tablespoon quality course sea salt plus more to taste
Heat a large cast iron or stainless steel skillet over high heat. Add the olive oil.
When the olive oil is hot, add one date. If the date sizzles, add the rest.
Toss the dates as they heat up and soften, 1-2 minutes. Don’t burn them! A few dark spots are okay but be careful.
Pour the hot dates onto a plate with the olive oil from the pan and sprinkle with salt. Serve immediately.
