Quick Skillet Lasagne

Lasagne, but much less trouble to prepare. So is it really lasagne? No. And not just because I left out the hideous mushrooms that are called for in the original recipe.

But it is tasty and quick to put together and has zucchini and red pepper in it to make sure you get some vegetables in you.

Here goes:

Get the pasta. In this case, it’s Mafalda. Which sorta looks like lasagne!

But as the recipe calls for rotini, I broke it into smaller pieces.

Some of the ingredients.

Begin the prep. Lots of chopping to do.

Cook the ham, zucchini, onion and pepper.

Don’t forget the Italian seasoning.

While that’s cooking, grate the mozzarella.

And stir the ricotta.

Cook, then drain the pasta.

Add the pasta sauce to the cooked vegetables.

After5 minutes of cooking, add the pasta.

I think this is nicer served in a casserole at the table so… transfer the pasta and all to a casserole dish.

Top with the ricotta cheese.

Broil in the oven until the top is browned and bubbling.

Quick Skillet Lasagne

4 cups rotini pasta
1 tsp. vegetable oil
2 zucchini, cubed
1 onion, chopped
1/2 cup sweet red or green pepper, diced
1-1/2 cups cooked ham, cubed
1 tsp. Italian seasoning
1/4 tsp. pepper
1 jar pasta sauce
1 tub ricotta cheese
2 cups mozzarella cheese, grated

In pot of boiling salted water, cook rotini. Drain and set aside. Meanwhile, heat oil over medium-high heat, cook ham, zucchini, onion, pepper and oregano for 8 minutes or until tender, tossing often. Add pasta sauce. Cook, stirring occasionally, for 5 minutes. Stir in cooked pasta. Transfer to a casserole dish. Spread ricotta evenly over top; sprinkle with mozzarella. Broil for 5 minutes or until golden brown.
