Baby Spinach, Snow Pea and Feta Cheese Salad

Of all the recipes by Jamie Oliver, I find more salads in his cookbooks that I want to try than any other kind of dish. This one is from The Naked Chef and is really tasty with a great balance of flavours… salty feta, sweet peas and tangy lemon. I changed his recipe a bit by adding edamame beans and using snow peas instead of peas.

And because I’m making a Jamie Oliver salad, I will use my Jamie Oliver Flavour Shaker. A kitchen gadget that works, though a bottle with a lid would work pretty well too.

Here’s what to do.

Get the spinach and wash it.

Get some snow peas. A couple of handfuls.

Cut them into bite-sized pieces.

Grab a chunk of feta cheese.

Feta cheese.

Squeeze a lemon for the juice.

Here’s the famous Flavour Shaker.

Add the salt and pepper to the shaker.

And the oil and lemon juice.

Put the lid on (tightly) and shake. Salad dressing!

Toss it together. I keep some edamame beans and snow peas back to drop on top and leave adding the feta until after the salad has been tossed so it doesn’t break up too much.

Baby Spinach, Snow Pea and Feta Cheese Salad
Yields: 4 servings

Ingredients

2 large handfuls baby spinach
2 smaller handfuls snow peas, sliced into bite-sized pieces
1/2 cup edamame beans
crumbled feta cheese

Method

You need 2 large handfuls of baby spinach – check for nasty stalky or wilted bits and then give it a really good wash (nobody likes gritty spinach).

Spin dry, and add to a salad bowl with 2 smaller handfuls of sliced snow peas and the edamame beans.

Dress the salad at the last minute with olive oil and lemon juice dressing and sprinkle crumbled feta cheese over the top.

Olive Oil and Lemon Juice Dressing

2 Tbsp. lemon juice
5 Tbsp. best of your best olive oil
1 level tsp. salt
1 level tsp. freshly ground black pepper

Mix all the ingredients together.

  1. Have made this sooo many times but mine is slightly different. I add sugar snap peas arugula, and spring mix… I get very bad indigestion from spinach unless it’s cooked it sucks because I love it! Anyways I also add lots of feta… I’ve had no complaints yet!
