Slow Cooker Cranberry – Orange Oatmeal

Everyone has their own favourite flavour pairing. It might be chocolate and mint or
chocolate and orange or
chocolate and coffee or
chocolate and raspberry or
chocolate and nearly anything. One of my favourite pairings—which doesn’t involve chocolate—is cranberry and orange.

In martinis:

I wanted to figure out a way to eat this combination for breakfast. The answer was to build the flavours into oatmeal. Using a slow cooker to do the work overnight means you can have oatmeal ready and waiting for you when you wake up in the morning. And the smell of it cooking may make it a bit easier to get out of bed. At least for as long as it takes to put some oatmeal in a bowl to take back to bed with you.

Here’s the way it goes.
Get the ingredients.

Orange, cranberries, steel cut oats and pecans.

Roughly chop and then toast the pecans.

Zest the orange.

Put all the ingredients in the slow cooker at night, set it to low and let it cook for 8 hours (overnight).

In the morning enjoy hot oatmeal.

Slow Cooker Cranberry – Orange Oatmeal

1-1/2 cups steel cut oats
1 cup dried cranberries
1 cup pecans, roughly chopped and toasted
zest of one orange
4 cups water

Pour all ingredients into a slow cooker, stir a bit, cover and set to low for 8 hours.
Store the leftovers in the refrigerator and eat oatmeal for breakfast all week. It reheats in the microwave very well.

Tips:
Depending on your slow cooker, you may want to spray the inside with cooking spray before you start. I don’t and never have a problem, but your slow cooker may be different. If you are leery about leaving the slow cooker on overnight, you can make this during the day and time it while you watch it so you know how long it takes to cook.
