Guacamole

Is there a better way to eat avocados? No, there is not.

And eating avocados is good for you, despite the bad reputation they’ve gotten in the past as being a high-fat food. The fats in the avocado have health benefits similar to those of olive oil. And they have anti-inflammatory benefits, may have anti-cancer benefits and are low-carb and low-sugar. If you need a reason to eat avocados, there are plenty beyond the lovely taste.

So! Guacamole.

What ingredients you need:

2 avocados
the juice of half a lime
1 tsp. salt
2 green onions, minced
1 Tbsp. minced fresh cilantro
1/2 tsp. garlic, minced then mashed into a paste

What you need to do:

Halve, remove the seed from and criss cross score the avocados, then scoop out the flesh into a bowl. Pour the lime juice over so the avocados don’t turn that unappetizing brown colour. Add the other ingredients, toss to mix (not too much to keep the guacamole chunky) and serve with tortillas and margaritas and/or beer (preferably Coronas). I use spray garlic juice because it mixes in so well with the guacamole but garlic paste works too.
