Is it? The best rice pudding in the world? Nah.
It tastes all right, and it’s super simple… mix all the ingredients together and cook it, unattended, for 2 hours. But I should have added raisins and this doesn’t end up as creamy as I’d like rice pudding to be. Plus there’s far too much cinnamon (Look at it! It’s pink! That’s not right.). Next time: no cinnamon, a vanilla pod instead and maybe milk and cream instead of milk alone.
So not the best in the world, no matter what the recipe is named.
The Best Rice Pudding in the World
1/3 cup Arborio rice
2 cups milk
3 Tbsp granulated sugar
2 Tbsp butter
grated rind of 1 lemon
2 tsp cinnamon
Preheat oven to 250 degrees. Mix the rice, milk, sugar, butter and lemon together in a bowl and pour the mixture into a greased 2 quart baking dish. Bake, covered, for 2 hours. Sprinkle with cinnamon and serve hot or cold.
I found pouring maple syrup on top was a fine addition.
