It seems that every time I look at a recipe with Brussels sprouts, the writer is assuring the reader that even if they dislike Brussels sprouts, they should try this recipe and their minds will be changed. They can learn to love the sprout!
I don’t know if that’s true here. I’ve always liked them, but never tried them in pasta until I made this dish. I started with a recipe I found on epicurious.com, but added diced pancetta to it. You could leave that out and make it vegetarian. I have no idea why you would do that, but it’s up to you.
