Vache Qui Rit Soup

I figure that if I get a couple of recipes from a cookbook, that book is worth whatever I paid for it. Here’s a winner from French Taste: Elegant Everyday Eating by Laura Calder.
This is one of the easiest soups ever. It takes hardly any effort or time and produces a beautiful, tasty soup.

Zucchini and onions, all chopped up. You don’t really need to do this chopping at all well because the soup is blended after the vegetables are cooked, but I took the chance to hone my knife skills (hone… get it?).

The recipe calls for 3 or 4 Vache Qui Rit (Laughing Cow) cheese triangles. I prefer Boursin because it has some bonus flavours and because I don’t want to unwrap 3 or 4 triangles of cheese.
